Have you noticed lately that EVERY day seems to be National “something” day?  So when I discovered that today is National Watermelon Day I was excited ... not excited, by the way,  as I was about National Lipstick Day but … excited because watermelon is my favorite fruit AND vegetable!  #YouKnowThatItsTechnicallyBothRight

And I’m celebrating this fab day by partnering with Cheddar’s Scratch Kitchen.  Now, you all know Cheddar’s.  They’re the ones with the signature Watermelon Vodkarita and although I don’t know their secret recipe, I do have mine … and it’s easy peasy. Oh ~ and I also like to serve my watermelon drink in an actual watermelon with a watermelon tap.  Follow these simple steps on how you can, too.

Firstly ~  (1)  Wash your watermelon. * I like using this size watermelon because it basically says  ‘This is all mine.’  #snicker

2. Slice a very thin sliver – about 1/4 inch – off the bottom of a watermelon and stabilize it.  (psst, if you cut off too much, the watermelon could leak.)

3. Cut off the top of the watermelon, roughly 1 inch down from the stem – just large enough to fit your hand into and set the top aside.

4. Using a spoon, scoop out the watermelon and place in a bowl to blend later.

5. Press the spigot slightly into the bottom portion of the watermelon to create an indent, THEN cut a hole with a small pairing knife.  Remove the rings from the spigot and press into the hole.

Twist the rings back onto the spigot from inside the watermelon until secure.

6.  Fill the watermelon with finely blended equal parts watermelon and ice with 1 or 2 shots of vodka.

POUR and ENJOY!
