You know what I don’t love about Spring? The fact that one day the weather is sunny and bright … and then the next day it’s overcast and chilly.
And speaking of chilly ~ did you know that here in New Mexico there’s yet another kind of chile and I’m talking about, of course, RED or GREEN. Chile (see how I did that there?) is spelled with an E and not an I and it just so happens to be the KEY ingredient in the PERFECT enchilada. I had heard there was a restaurant in Santa Fe that had been crowned with the title of the PERFECT enchilada by Heritage Magazine and I, frankly, need to know more. So a few weeks ago, I ventured to Santa Fe and met up with the creator of such enchilada, Chef Estevan, who not only showed me how to make his perfect enchilada (which, BTW, is served flat, and not rolled … as many New Mexican “traditionalists” prefer … but it also doesn’t have a bunch of “stuff” on top of it. Oh ~ and yeah … it’s topped with an egg.) he also gifted me with the recipe for his famous red chile sauce!!

ESTAVANS CHIMAYÓ RED CHILE SAUCE
Ingredients:
20 Red Chile pods
2 Cloves of garlic (minced)
1 Gallon water
1/2 Gallon pork broth
2TBS Salt
Directions:
Clean and seed dried chile pods. Place chile pods in warm water and cook for 45 minutes. Place pods w/hot water and broth into a blender and blend until mixture thickens. Add garlic and salt and continue to blend until pods are part of the mixture. Put chile mixture through sieve and press mixture through sieve into container. Discard anything left inside of sieve. If cooking immediately, place mixture in pot or sauce pan and cook for 45 minutes.

Love the stripes…says Spring/Summer and get me to the yacht…if I had one…as far as the chile–green,red,Christmas I love it all and as always learning new things from you Jamie…didn’t know about the traditional flat enchilada but it looks delicious and may need to check out Hotel Chimayo on our next visit to New Mexico and try one…thanks as always.
