Fun Fact:  Unless my husband and I go out, we cook together every. single. night.  That’s right, every night and it’s something we really enjoy doing together.

We each have our respective “jobs” ~ I determine what we’re going to eat and then purchase the groceries accordingly, he cleans, preps and chops everything and then I cook the meal.  Most nights, the recipes I select generally come from my forever subscription to Cooking Light Magazine, this was until I discovered …

You see, although the meals from Cooking Light are quite yummy, they don’t always focus on specific meal preferences such as; Paleo, Vegetarian, Gluten-Free, Low Carb, Weight Loss, Food Allergies and No Red Meat however PlateJoy does … any time you want it to.

PlateJoy provides you with custom, on-demand meal plans and grocery lists based on what your current meal preference happens to be. You just complete a quick lifestyle quiz answering questions about your tastes, health goals and time constraints  and then you’ll receive custom-designed meal plans sent directly to your inbox.

What I like about the recipes is that they coordinate with what you already have in your pantry, you only have to buy what you actually need and you don’t have to go to special grocery stores to hunt down obscure ingredients.  So for a recent recipe, I found everything that  I needed …

at my local Trader Joes.

Another Fun Fact: I like to support local companies who do good things and I’m showing my NM pride by wearing my New Mexico vs. Evrybdy tee c/o NMVE$1 of every purchase from NMVE goes to support children with ASD.

My husband and I tend to eat mainly vegetarian so the PlateJoy recipe I decided to make was Mediterranean stuffed sweet potatoes with garlic-herb chickpeas.   #SayinItWasDelishWasPuttingItMildly

I gathered up all my ingredients …
and grabbed the most complicated tool in the kitchen that the recipe called for …
[ cooking outfit:  alien sweatshirt c/o | denim c/o | similar sneaks ]

As well as my fave optional ingredient.

Second glass of wine … also optional.

The meal took less than 15 minutes to make. The hardest part was waiting for the sweet potatoes to cook in the microwave.

Here’s how it turned out:

Now, I’m no Food Editor but I AM a food consumer.  This meal was so good, so healthy, so easy and exactly what I enjoy eating. All of the recipes I’ve tried from PlateJoy have been terrific.

So if you think you might enjoy trying PlateJoy for yourself they have two plan to consider: $59 for a 6-month subscription or $89 for a year-long subscription.  Click here to subscribe and you can receive $10 off either plan by using code TURQUOISE at check out.
