My husband and I tend to eat mainly vegetarian so the PlateJoy recipe I decided to make was Mediterranean stuffed sweet potatoes with garlic-herb chickpeas. #SayinItWasDelishWasPuttingItMildly

The meal took less than 15 minutes to make. The hardest part was waiting for the sweet potatoes to cook in the microwave.

This is fabulous! My husband and I rarely eat meat..only on holidays. We do eat fish. These recipes look very good and easy to make. I will be checking this out. I work out and watch what I eat, but I am always looking for ways to prepare food that lean more to the Mediterranean diet and without meat…I do not know why, but I never think of fish, shrimp and such as meat. Thank you for the head’s up. Love your fab stove. You look so relaxed and stylish in your casual cooking outfit….
